Beef is king plain and simple. When you go to a fine resturant you order a nice BEEF steak. No one goes to Ruth Chris and orders a pork chop.

I can understand why people in Texas do not like pulled pork, you can't find anyone there who knows how to make it right. The same can be said for brisket outside of Texas, the rest of the country doesn't understand how to cook it. It's like trying to find good Mexican food in Canada. Since I have left Texas and moved to the old south, I do have a better appreciation for pork shoulder, but when I introduce brisket to people who grew-up eating pork, they prefer brisket.
